What is Buri and Hamachi?

“Buri” and “Hamachi” refer to different growth stages of the same fish species, the Japanese amberjack (Seriola quinqueradiata).

Buri (Japanese Yellowtail): Refers to mature fish, typically 4 years or older. It has a richer, more robust flavor, making it ideal for dishes like teriyaki or grilled preparations.

Hamachi (Japanese Amberjack): Refers to younger fish, approximately 1 to 3 years old. It is known for its mild, buttery flavor and is popular in sushi and sashimi.

In the U.S., the term Amberjack is often used as a general term to refer to species like Buri, Hamachi, Hiramasa, and Kanpachi collectively. However, in Japan, these fish are classified more precisely based on species and even life stages, reflecting the country’s nuanced approach to seafood.
